Revel’s story begins with their head brewer, Adam Gallegos. Once a craft beer brewer, Adam’s journey took a turn when he and his wife, Sonia, heard about the health benefits of kombucha. Intrigued, they decided to brew a batch at home—but the sugary fermentation left them uninspired.
Upon discovering jun — a delicate ferment of raw honey and green tea, often called the “champagne of kombuchas,” Adam and Sonia noticed something else: their health and energy improved.

They knew this was a drink worth sharing. Adam dove into perfecting the brew, while Sonia designed a vibrant, family-friendly tasting room near their home in Ojai, California.
Now, their kombucha bar, Revel, in downtown Ojai is where the magic happens—fresh jun kombucha on tap, tasting flights so you can sample all your favorites, and even kombucha floats for a fun twist.
